Chaat Masala Elote Corn

Corn is one of summer’s great gifts, sweet, juicy, part of natures bounty. Ayurveda encourages us to enjoy foods in their natural season, prepared appropriately for our constitution, and in moderation.

Corn can be somewhat dry and light, so Ayurveda gives us simple ways to make it more balanced. Vata benefits from moisture, richness, and sour flavors; Pitta from cooling herbs and gentle spices; and Kapha from warming spices and a lighter hand with rich toppings.

This recipe brings those principles together with creamy yogurt, spiced ghee, digestive spices, fresh lime, and a little crunch. Think of it as summer corn through an Ayurvedic lens. The beauty of Ayurvedic cooking is not about eliminating foods, it’s about learning how to prepare and balance them for yourself.

Ingredients

Corn & Spiced Ghee

  • 6 ears fresh sweet corn
  • 3 Tbsp ghee
  • 1 tsp ground cumin
  • ½ tsp fennel
  • ½ tsp coriander
  • ¼ tsp turmeric
  • ¼ tsp ginger

Corn & Spiced Ghee

  • ½ tsp ground cumin
  • ½ tsp sumac, plus more to finish
  • Tiny pinch hing
  • 1–2 tsp honey
  • 1 Tbsp fresh lime juice
  • Salt, to taste
  • ¼ cup chopped cilantro

Spiced Yogurt

  • ⅔ cup full-fat Greek yogurt, room temperature
  • ¼ tsp roasted cumin
  • 1 Tbsp chopped cilantro
  • Pinch ginger
  • ¼ TSP salt
  • 1–2 tsp warm water, as needed

Chickpea Crunch

  • ½ cup roasted chickpeas, roughly crushed
  • 1 tsp sesame seeds
  • ¼ tsp sumac
  • ¼ tsp roasted cumin
  • Pinch salt

Cook the corn: Steam for about 8 minutes, until tender. Drain well. For a little char, briefly grill.

Make the spiced ghee: Melt ghee over medium-low heat. Add cumin and fennel and gently sizzle for 30 seconds. Add coriander, turmeric, ginger, and hing; cook another 20 seconds. Remove from heat, let cool slightly and stir in roasted cumin, sumac, honey, lime, and salt.

Make the yogurt: Whisk everything together, adding warm water until smooth and spoonable. To make this recipe dairy free omit yoghurt and make with tahini or cashews.

Make the crunch: Toss chickpeas with sesame, sumac, roasted cumin, and salt. For extra flavor, fry 1 Tbsp of the mixture in 1 tsp of the spiced ghee for 30–45 seconds.

Assemble: Spread ⅔ of the yogurt onto a platter. Add the warm corn, spoon over the remaining yogurt, and drizzle generously with spiced ghee. Finish with chickpea crunch, cilantro, and sumac. Serve with lime wedges.

This recipe can be changed based on dosha. For kapha individuals reduce the honey or use old honey, for Pitta use less yoghurt, and for Vata use less dry ingredients and keep it warm and juicy.
