If you have never made salad kraut, it is the best. This is such a great way to use up extra veggies, and its fresh and light and you can eat it out of the jar, or add to salads, or proteins etc. lightly fermenting foods is a great way to reduce the amount of raw foods in your diet if you have any troubles with your digestion. In Ayurveda we talk about the elements a lot. Every person has their own unique combination of the elements, kind of like your ethnicity. You are made up of a little of this and a little of that. Ayurveda is the original "eat for your body type" diet. When choosing foods to eat, we want to look at the tastes, digestibility, and of course freshness. Ingredients
- 2-3 Shredded carrots
- 1⁄2 head Napa cabbage chopped thin
- 1 bunch Finely shredded kale (without stems)
- 1 bunch Scallions chopped fine
- 2-3 Beets shredded skin off
- 1 bunch Parsley pick and chopped rough
- 1-2 Shredded zucchini
- 1 clove of garlic
- 2 tbsp Sea salt
- 1 tsp Aleppo chili (or a korean coarse chili powder)
- 2 inch knob of Ginger finely grated
- 2-3 TBS red or white Miso
- Half a lemons juice
- 1 tbsp sesame seeds
In a large bowl mix all ingredients, massage with 2 tbsp sea salt, mix until the miso is fully incorporated.
Allow it to make its own liquid. Pack veggies in a very clean 2 qrt jar pour liquid over the top Make sure the veggies are completely submerged, add salted water to cover otherwise. Weight with a glass or something that fits into the top of the jar to keep the veggies down.
Sit on the counter for a few days covered with a loose fitting lid and a towel. Check and make sure there is enough liquid and nothing is poking out. When it has reached its desired fermentation, cover and put in the fridge. Enjoy within 1-3 months.
